Moët Hennessy uses AI to flag early risk of wine aroma defect

Moët Hennessy’s research center near Épernay has assembled samples and data to train machine-learning algorithms to spot an early risk of Fresh Mushroom Aroma (FMA), an aromatic defect affecting some wines, Luxus Plus reports. The partners say the system identified high-risk samples before the aroma could be detected through traditional methods.

The approach examines a broad range of chemical signatures rather than relying only on a known indicator. The report describes the research as part of an effort to use AI and sensors to anticipate quality risks; it does not identify the other partner or provide details on the sensors or the system’s commercial deployment.
