Vincent Tan leaves Odette after 10 years to lead Park90’s wine program

Vincent Tan will become Park90’s group wine director on Oct. 19, leaving his post at Singapore restaurant Odette after 10 years. CNA Luxury reports that Tan helped build Odette’s wine program from the restaurant’s opening and will take on a broader role as Park90 pursues growth beyond Singapore.

Park90, which now operates at Pan Pacific Orchard as an independent brand in partnership with the hotel, has more than 1,000 wine labels. Its program spans hotel spaces from the pool to the Claymore Ballroom and includes restaurant and wine-cocktail offerings. The business is planning launches in Kuala Lumpur and Bangkok, giving Tan’s group title a regional remit, though he has not yet set out its precise scope.

Tan is not planning immediate changes to the list. He intends to taste through the wines and get to know the operation before deciding what to adjust. Park90’s Singapore team includes joint head sommeliers Terry Lim and Zhen Jie New, with Justin Ho as regional head sommelier. Tan said producer relationships from Odette would not automatically transfer to the new list; the team would assess whether each producer belongs there.

At Odette, Tan has given chef Julien Royer a shortlist of potential successors but has stayed out of the final choice, according to CNA Luxury. The handover follows the restaurant’s renovation and reopening. Park90’s previous wine director, Mason Ng, left at the start of 2026, after which discussions about Tan joining the business became more serious.

Tan also identified recruitment as a challenge for the sommelier trade, saying that some young graduates do not understand what the job involves. He plans to introduce wine to people outside established wine circles. Park90’s move and planned regional openings put that staffing and audience-building effort alongside the operational challenge of maintaining a distinctive program across a growing hospitality business.
